We don’t know about you but we’re needing some new options in our lives…When it comes to meals, we tend to stick to what we know, but with being “safe” at home…not gonna lie…we’re getting kinda tired of eating the same things every week! So check out some of these options below!

Thai Chicken Lettuce Wraps recipe to share from delish.com

Thai Chicken Lettuce Cups

INGREDIENTS

1/2 c. sweet chili sauce

1/3 c. low-sodium soy sauce

Juice of 1 lime

3 T. extra-virgin olive oil

1 T. Sriracha

2 tsp. freshly grated ginger

2 cloves garlic, minced

3 boneless skinless chicken breasts

12 leaves romaine or butter lettuce

1/2 red onion, thinly sliced

1 carrot, shredded

1 T. freshly chopped cilantro

 

INSTRUCTIONS

  1. In a large bowl, combine chili sauce, soy sauce, lime juice, oil, Sriracha, ginger, and garlic. Whisk to combine. Add chicken breasts to the bowl and toss with marinade.
  2. Heat a large grill pan over medium heat. Add chicken breasts and cook until golden. Plate to let rest, then thinly slice.
  3. Build your lettuce cups: Fill lettuce cups with chicken and garnish with onion, carrot, and cilantro before serving.

Make everyday taco Tuesday! Another great option for the shell or tortilla is melting a handful of cheese in the oven. 350 degrees for 6-8 minutes. Cheese shell…mmm…delicious!

Cheesy Ground Beef Tacos

INGREDIENTS

1 large onion, chopped

1 lb. ground beef

1 (15 oz) can fire-roasted tomatoes

1 (15 oz) can black beans, drained and rinsed

1 T. taco seasoning

salt

2 c. shredded cheddar or pepper jack cheese

8 small flour tortillas

Sliced green onions, for serving

Sour cream, for serving

 

INSTRUCTIONS

  1. In a large skillet over medium-high heat, cook onion until soft, 6 minutes. Add beef and cook until no longer pink, 5 to 7 minutes more, then add tomatoes, black beans, taco seasoning, and season with salt. Stir until combined. Add cheese and stir until completely melted.
  2. Spoon mixture into flour tortillas and fold. Garnish with green onions and serve with sour cream.

Who doesn’t love a good pasta dish! Switch the spaghetti noodles out with spaghetti squash for a healthier option!

Baked Spaghetti

INGREDIENTS

Cooking spray

16 oz. spaghetti

2 T. extra-virgin olive oil

1 medium yellow onion, finely chopped

2 cloves garlic, minced

1 lb. ground beef, pork, turkey or whatever type of meat you prefer

Salt

Ground black pepper

1 t. Italian seasoning

1 (28 oz) can crushed tomatoes

1/2 c. basil, chopped

1 c. shredded mozzarella

1/4 c. freshly grated Parmesan

Chopped fresh parsley, for garnish

 

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Grease a medium baking dish with cooking spray.
  2. Cook spaghetti according to package directions until al dente, drain and set aside
  3. Meanwhile, in a large skillet over medium heat, heat oil. Add onions and cook until soft and translucent, about 5 minutes. Stir in garlic and cook until fragrant, 1 minute more. Add ground beef, season with salt, pepper, and Italian seasoning, and cook until no longer pink, about 8 minutes. Drain fat in a bowl lined with paper towels and return to pan. Pour in crushed tomatoes and basil and simmer until slightly reduced about 10 minutes. Season with more salt and pepper to taste.
  4. Toss with spaghetti, then transfer to a baking dish and top with mozzarella and parmesan. Bake until cheese is melted and pasta is warmed through, about 20 minutes.
  5. Garnish with parsley and serve.

This next recipe is a great one for summer grilling, and you can customize and add in or take out whatever you would like!

Cheeseburger Bum Packs

INGREDIENTS

1 lb ground beef (80% lean)

1 egg beaten

1 tsp seasoning salt

1/2 tsp garlic powder

4 small potatoes, peeled and sliced

1 lb baby carrots

2 T. olive oil

1/2 tsp. salt

1/4 tsp. pepper

4 slices of cheese

 

INSTRUCTIONS

  1. Preheat the grill to 350 degrees.
  2. In a bowl combine the meat, egg, seasoning salt, and garlic powder. Form into four patties, (you could also buy these premade) and set aside.
  3. In a large bowl combine the remaining ingredients except for cheese slices. Mix until combined.
  4. Spray four 12″ x 18″ pieces of foil with nonstick spray. Place 1/4 of the vegetables in the center of the foil. Top with a beef patty. Seal packets and place beef side up on the grill.
  5. Grill for 35-45 minutes or until potatoes and carrots are tender and the ground beef reaches 160 degrees.
  6. When the packets are done open the top, burger patty face up, and add a piece of cheese. Close the grill cover, and grill for 2-3 minutes or until the cheese is melted.

These can also be done in the oven at 350 degrees as well. Bake for about 45 minutes or until the internal temperature of the beef is 160 degrees.

Baked Salsa Chicken Recipe to share from Keto Karma

Baked Salsa Chicken

INGREDIENTS

4 chicken breasts, boneless and skinless

1 tsp chili powder or taco seasoning

1 pinch of salt and pepper

2 c. chunky salsa

2 c. cheddar cheese shredded

2 T. chopped cilantro, optional

 

INSTRUCTIONS

  1. Preheat over to 375 degrees and heat a large skillet over high heat.
  2. Season chicken breasts with chili powder (or taco seasoning), salt, and pepper.
  3. Spray skillet with cooking spray and transfer chicken to the skillet. Cook chicken for 2 minutes per side, or until just browned.
  4. Place chicken into a 9×9 baking dish, cover in salsa, and then sprinkle cheese on top.
  5. Bake for 30 minutes, or until cheese is bubbly and the internal temperature of the chicken is 165 degrees.
  6. Top with fresh chopped cilantro and avocado if desired.
